The Princess Diarist
It is a period of internet memes.
Rebel spaceships, striking from a hidden base, have read their first memoir of the actress Carrie Fisher.
During the diary, Rebel bakers managed to steal secret plans to King Arthur Flour’s ultimate weapon, the CINNA BUN, a sweet roll with enough powder to destroy an entire diet.
Pursued by the Empire’s sinister agents, Princess Leia races home aboard her starship, custodian of the stolen recipe that can feed her people and restore sweetness to the galaxy….
Princess Leia Cinnamon Buns
an interpretation of King Arthur Flour’s recipe.
Ingredients:
Dough:
1 cup Luke (ha) warm milk
2 large eggs, room temp
1/3 cup unsalted butter, softened
4 ½ cups flour (I used a mix of all purpose and whole wheat, thus healthy)
1 ¾ teaspoons salt
½ cup granulated sugar
2 ½ teaspoons instant yeast
Filling:
1/3 cup unsalted butter, softened
1 cup brown sugar
3 tablespoons cinnamon
Icing:
6 tablespoons cream cheese
¼ cup unsalted butter, softened
1 ½ cups confectioner’s sugar
½ teaspoon vanilla extract
Directions
Mix the dough ingredients together and knead into a smooth dough.
Let the dough rise in a lightly oiled bowl for 1-2 hours, until it has nearly doubled. If your kitchen is cold, like mine, or perhaps your yeast was a dud, you may find after 2 hours you are unimpressed with the dough’s progress. I suggest you continue on anyway.
Roll out the dough into a rectangle. Don’t forget to grease your work surface first.
Mix the brown sugar and cinnamon. Spread the dough with 1/3 cup butter, and sprinkle with the sugar-cinnamon mixture.
Roll the dough into a log. At this point, it will become obvious if you forgot to grease your work surface, and make the rolling infinitely more difficult.
Slice your log into 12 buns.
Place the buns in a lightly grease pan. Cover and let the buns rise about 30 minutes. Once again, this might not be a very impressive rise, but you might be impatient, and you may have already preheated your oven to 400°F.
Uncover and bake the buns about 15 minutes.
Beat together the icing ingredients while your buns are baking.
Remove the buns from the oven when they are golden brown, and ice them while they are warm to get that nice melty icing. You might not even be a big fan of cream cheese icing, but find this one quite tasty.
Serve warm for tastiest results. They reheat quite nicely, and remember there was some whole wheat in there, so they are probably healthy.
